Our beets are coming in so nicely!


I only wish we had planted more. They're going rather fast between fresh eating and pickling. And the greens are so tasty.


Lucky for me, Ana loves them. So for today, we'll be having beets for lunch.

what does a fresh beet taste like? I think i've only had packaged ones.

I've never had them raw, but roasted or steamed ... THE BEST. They are sweet with a silky but firm texture. Ana loves them roasted with a drizzle of olive oil and salt. So do I, of course. And then the greens we sautee with olive oil and garlic and a little bit o salt, and sometimes tarragon when I have it fresh. ASHSHSHSH Tasty.
