Finally!


Oh beautiful Khai Pa Lo (no idea how to transliterate the thai) that tastes like mom's! And mom knows how many times I've banged my head into the wall over this one. Ta da!! I made 5 eggs, and I ate them all they were so good. Ana had a modest 1/2 egg. Sissy. Although, before bed, she did have a boatload of tofu soup. I don't know what it is about tofu and Ana. But she can't get enough of it.

Thai Eggs (Khai Pa Lo)
2 cloves minced garlic
2/4 Tablespoons Chinese 5 Spice (I just use cinnamon, and so does mom)
1 star anise
2 T. oil
a pinch of cumin
soy sauce or fish sauce
black pepper
water
1-2 T brown sugar

Heat oil over medium heat and add garlic. Cook until the air smells like garlic. Add 5 spice, star anise and cumin and heat, stirring, until aromatic (1 minute or so). Add 2 T soy sauce or 1 T fish sauce (I used soy, but I think mom usually uses fish), and a few shakes of pepper. Heat until aromatic (lots of aromatics!). Add shelled hard-boiled eggs (I did 5 and had a good amount of sauce/egg ratio), and heat a bit. Add 1/4 c. water and 1-2 T. brown sugar. Stir and heat s'more. Done! Eat ravenously with rice.

Speaking of Ana, here is a shot of her looking mighty cute. She just got these new overalls in the mail today. Plenty of room to grow, that's how we like 'em! Sorry about the fuzziness. It's getting harder by the day to photograph her without lots of action on her part going on.
